Breakfast Sausage

Breakfast Sausage

Adapted from Bon Appetit. Homemade breakfast sausage is not necessary (as Ina Garten would say “store bought is fine”) but they’re really easy to make and much more delicious.

Ingredients

  • 1 teaspoon finely chopped fresh sage
  • 1 teaspoon light brown sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon crushed fennel seeds
  • ¼ teaspoon crushed red pepper flakes
  • ⅛ teaspoon garlic powder
  • ½ pound ground pork shoulder

Instructions

  1. Combine the sage, brown sugar, salt, fennel seeds, red pepper flakes and garlic powder in a bowl.
  2. Add ground pork to spice mixture and mix until well combine
  3. Using a ¼ measuring cup, form a ball and then flatten into patties, ¼” thick
  4. Store between two pieces of parchment paper and refrigerate before use
  5. To cook, heat a pan over medium high heat and cook each patty for 2 minutes on each side

Notes:

The ground pork you find in grocery stores is most commonly ground pork shoulder. The pork shoulder is also sometimes referred to as Boston butt or pork butt. The cut of meat referred to as a pork butt is actually positioned at the shoulder of the pig, while the actual butt of the pig is what is used for ham.

Ingredients

  • 1 cup sour cream 
  • 3 tablespoons finely chopped parsley
  • 3 tablespoons finely chopped dill
  • 1 clove garlic, minced
  • 2 teaspoons lemon juice
  • Salt to taste 

Instructions

  1. Combine all ingredients in a bowl. Add salt to taste. 
  2. Store in an airtight container in the fridge until ready to serve. 
  3. Serve with assorted vegetables, like celery sticks, carrots sticks, sliced radishes.

Hummingbird Cake with Cream Cheese Frosting

Halve the recipe and use 2 8" square cake tins to make a square golf cake

Ingredients

Cake
  • 3 cups all purpose flour 
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 1/2 cups vegetable oil 
  • 1 1/2 teaspoon vanilla 
  • 8 ounces crushed pineapple
  • 2 cups mashed bananas
  • 1 cup pecans
Cream Cheese Frosting
  • 1 cup butter, softened 
  • 8 ounces cream cheese, softened
  • 16 ounces powdered sugar
  • 2 teaspoons vanilla

Instructions

Cake
  1. Preheat oven to 350 degrees
  2. Grease and flour 3 9" round cake tins. 
  3. In a large bowl, whisk together flour, baking soda, salt, sugar and cinnamon. 
  4. In a medium bowl, whisk together eggs, oil, mashed bananas, and crushed pineapple. 
  5. Fold wet ingredients into the dry ingredients, then fold in pecans. 
  6. Evenly distribute batter into the 3 tins and bae for 25-30 minutes.
  7. Allow to cool in the pans on a wire rack.
Cream Cheese Frosting
  1. Combine all the ingredients in a bowl and whip until well combined using a stand mixer or hand mixer.
  2. Add green dye if you intend to make a golf cake!
Yield: 4 Whole Sandwiches
Pimento Cheese Sandwiches

Pimento Cheese Sandwiches

Ingredients

  • 1/4 cup of mayo 
  • 4 ounces cream cheese, softened 
  • 4 ounces pimentos, drained and diced
  • 1 teaspoon Worcestershire sauce
  • 2 cups grated sharp cheddar cheese
  • 1/8 teaspoon Tabasco 
  • Salt and pepper to taste
  • 8 slices of white bread 

Instructions

  1. Combine all ingredients in a bowl. Add salt and pepper to taste. 
  2. Store in an airtight container in the refrigerator.
  3. When ready to serve, spread onto white bread and cut into triangles.

Biscuits, like good friends, help each other rise higher!

Ingredients

  • 1/2 cup frozen butter
  • 2 1/2 cups all purpose flour 
  • 1/2 teaspoon salt
  •  1 tablespoon + 3/4 teaspoon baking powder
  • 1 cup buttermilk

Instructions

  1. Preheat oven to 475 degrees. Line a baking sheet with parchment paper.
  2. Combine flour, salt and baking powder in a bowl. 
  3. Grate frozen butter using a box grater. Give the mixture a stir to distribute butter throughout the flour. 
  4. Add buttermilk into the flour butter mixture and stir using a wooden spoon- around 15 stirs will do. Careful not to overwork the dough. 
  5. Onto a lightly floured surface, dump the bowl contents out - the dough will be shaggy at this point. Pat the dough out an inch thick and then fold onto itself. Repeat 5 times. 
  6. Pat the dough out into 1/2" thick round and cut out biscuits of your size preference. 
  7. Bake for 15 minutes, until golden brown. 
Yield: 8 deviled eggs
Deviled Eggs

Deviled Eggs

Ingredients

  • 4 eggs 
  • 2 teaspoons Grey Poupon mustard
  • 3 tablespoons mayo
  • Salt and pepper to taste

Instructions

  1. Place eggs in a pot and cover with an inch of water. Heat water over high heat until water boils. Once water boils, cover and turn off heat. Leave covered for 12 minutes. 
  2. Remove eggs from the hot water and run under cold water. Then gently peel the shell off. 
  3. Split the eggs length wise. Clean your knife off before every cut. 
  4. Gently remove egg yolks from egg whites. Combine mayo, mustard and egg yolks in a small bowl. Smash egg yolks with the back of a fork to get a smooth texture. Add salt and pepper to taste. 
  5. Pipe egg yolk mixture into egg whites. Lightly dust with paprika if desired 

Notes:

Tip: the night before you boil your eggs, flip the eggs upside down. This will help move the yolk to the middle of the egg for a more visually appealing deviled egg

Spiked Pink Lemonade

Ingredients

  • 3/4 cup sugar
  • 3/4 cup water 
  • 3/4 cup of lemon juice
  • 1 cup vodka 
  • 2 teaspoons grenadine
  • 1 cup club soda 

Instructions

  1. In a small saucepan, over medium-low heat, combine sugar and water. Stir until sugar is dissolved. Allow to cool
  2. In a pitcher, combine lemon juice, sugar water mixture, grenadine, vodka and club soda. 
  3. Serve over ice
