Biscuits

Biscuits, like good friends, help each other rise higher!

Ingredients

  • 1/2 cup frozen butter
  • 2 1/2 cups all purpose flour 
  • 1/2 teaspoon salt
  •  1 tablespoon + 3/4 teaspoon baking powder
  • 1 cup buttermilk

Instructions

  1. Preheat oven to 475 degrees. Line a baking sheet with parchment paper.
  2. Combine flour, salt and baking powder in a bowl. 
  3. Grate frozen butter using a box grater. Give the mixture a stir to distribute butter throughout the flour. 
  4. Add buttermilk into the flour butter mixture and stir using a wooden spoon- around 15 stirs will do. Careful not to overwork the dough. 
  5. Onto a lightly floured surface, dump the bowl contents out - the dough will be shaggy at this point. Pat the dough out an inch thick and then fold onto itself. Repeat 5 times. 
  6. Pat the dough out into 1/2" thick round and cut out biscuits of your size preference. 
  7. Bake for 15 minutes, until golden brown. 

Baked Eggs

Ingredients

  • 6 Eggs
  • Cooking Spray
  • 6 small slices of cheddar cheese (or the cheese of your preference!) - optional
  • Salt 
  • Pepper

Instructions

  1. Preheat oven to 350 degrees. 
  2. Spray muffin tin with cooking spray. Crack an egg into each well. Season with salt and pepper. Top with cheese. 
  3. Bake for 10 minutes for a runny yolk. Bake for 14-15 for a harder yolk. 
  4. Gently pry the eggs out of the muffin tin using a large spoon. 
Yield: 6 Muffins
Brioche French Toast Muffns

Brioche French Toast Muffns

Ingredients

  • 2 cups cubed brioche 
  • 3 eggs
  • 3/4 cup milk
  • 2 tablespoons sugar 
  • 1/8 teaspoon salt 
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon orange zest
  • Cooking Spray

Instructions

  1. Preheat oven to 350 degrees. 
  2. Spray or grease muffin tins. 
  3. Beat eggs, milk, sugar, salt, cinnamon and orange zest together. Then mix brioche cubes. Be sure all the bread is saturated with the egg mixture. 
  4. Spoon mixture evenly between the muffin wells and bake for 25 minutes. Allow to cool in the muffin tins on a wire rack for 15 minutes. 
  5. Serve with maple syrup.
