Winner Winner Chicken Dinner

If you know how to turn on an oven, you can roast a chicken. It is truly one of the easiest things to make and it’s sure to impress. And if you can roast a chicken, you can certainly roast some vegetables.

Sometimes the simplest meals are the best meals and I would argue a roast chicken, roasted carrots and mashed potatoes are guaranteed to hit the spot, especially with a glass of chilled white wine. What makes this dinner ever better is that it only takes one pot and one cast iron skillet to make it.

I like to carve my chicken in the kitchen and plate it all on a platter because I don’t love when cooking becomes a spectator sport. That being said, feel free to do what you’re comfortable with. I’ll even teach you how to carve a chicken next week!

Any dessert is a great conclusion to this meal but I’ve made a mini German chocolate cake with coconut frosting. German chocolate cake was almost always my birthday cake flavor growing up so it has a very special place in my heart.
