An Egg-cellent Brunch: The Logistics

I believe breakfast food can be eaten for any meal, regardless of the time of day.

The Recipes

Yield: 4-6 Servings
Caramelized Onion, Spinach, Parmesan Frittata

Caramelized Onion, Spinach, Parmesan Frittata

Ingredients

  • 6 eggs
  • ¼ cup whole milk
  • ¾ cup grated parmesan
  • 1 onion, halved and sliced lengthwise
  • 2 cups of spinach
  • Olive Oil

Instructions

  1. Preheat oven to 400 degrees.
  2. In an ovenproof 8-10” skillet (no rubber handles!!), over medium low heat, lightly coat the bottom with olive oil
  3. Add in sliced onions and stir. Once translucent, about 4-6 minutes, add a generous pinch of salt. Stir occasionally for 30-40 mins. If your pan begins to dry out, add ¼ cup of water to the pan. Add more as needed
  4. In a bowl, combine the eggs and milk, Whisk until just combined. Then whisk in a heavy pinch of salt, parmesan cheese and a few grinds of pepper.
  5. Add the caramelized onions and spinach to the egg mixture. Fold until just incorporated
  6. Heat the same skillet from earlier over medium heat. Once the pan is preheated, add egg mixture. Cook until the edges are beginning to set, about 2 minutes
  7. Place the skillet in the oven and bake for 8 to 10 minutes
  8. Loosen the edges from the pan and slide onto a plate to serve

Homemade Breakfast Sausage

Homemade Breakfast Sausage

Adapted from Bon Appetit. Homemade breakfast sausage is not necessary (as Ina Garten would say “store bought is fine”) but they’re really easy to make and much more delicious.

Ingredients

  • 1 teaspoon finely chopped fresh sage
  • 1 teaspoon light brown sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon crushed fennel seeds
  • ¼ teaspoon crushed red pepper flakes
  • ⅛ teaspoon garlic powder
  • ½ pound ground pork shoulder

Instructions

  1. Combine the sage, brown sugar, salt, fennel seeds, red pepper flakes and garlic powder in a bowl.
  2. Add ground pork to spice mixture and mix until well combine
  3. Using a ¼ measuring cup, form a ball and then flatten into patties, ¼” thick
  4. Store between two pieces of parchment paper and refrigerate before use
  5. To cook, heat a pan over medium high heat and cook each patty for 2 minutes on each side

Notes:

The ground pork you find in grocery stores is most commonly ground pork shoulder. The pork shoulder is also sometimes referred to as Boston butt or pork butt. The cut of meat referred to as a pork butt is actually positioned at the shoulder of the pig, while the actual butt of the pig is what is used for ham.

Blueberry Muffins

Blueberry Muffins

Ingredients

  • 1 cup All Purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 small egg
  • 1/2 cup sugar
  • 2 tablespoons melted butter
  • 1/2 cup buttermilk 
  • 3/4 cup of blueberries
  • More sugar for dusting

Instructions

  1. Preheat oven to 350 degrees
  2. Whisk dry ingredients together in a medium bowl
  3. Whisk egg and sugar together for 40 seconds. Then whisk in butter until combined. Whisk in buttermilk until combined
  4. Add blueberries to dry ingredients. Then fold wet ingredients into the dry ingredients
  5. Spoon batter into lined muffin tins. Dust batter with sugar
  6. Bake for 25-30 minutes, until golden brown
 

The Timeline

While all of this can be done the day of, I recommend prepping the day before to allow for a more leisurely morning before your guests arrive. As before, I recommend setting your table the night before.
