Steak Salad

Steak Salad

Ingredients

  • 1 Recipe of Vinaigrette
  • 1/4 of Red Onion, thinly sliced
  • 10 ounces of Arugula 
Marinated Flank Steak
  • 2 cloves garlic, minced 
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1.5 lb Flank Steak

Instructions

  1. Combine all the ingredients for the marinade in a ziplock bag and marinate for at least 4 hours in the fridge or overnight. 
  2. When ready to cook, heat a cast iron skillet over medium high heat. 
  3. Remove steak from ziplock and pat off excess marinade. Cook steak in cast iron skillet, about 6 minutes each side. 
  4. Remove from heat and allow to rest for 5 minutes before slicing and serving with dressed arugula with red onions. 

Notes:

This salad is also great with blue cheese or gorgonzola added in!

Ingredients

Lemonade
  • 3/4 cup sugar
  • 1 1/2 cup water
  • 3/4 cup of lemon juice
Iced Tea
  • 3 tea bags, Lipton works fine
  • 1 1/2 cups water

Instructions

Lemonade
  1. Combine all ingredients. Adjust sugar to taste.
Iced Tea
  1. Boil water then steep tea bags for 5 minutes. Cool in the fridge
  1. Combine lemonade and iced tea. Adjust sugar to taste.
  2. Spike with vodka to make a John Daly - about 1 ounce of vodka per glass

Vinaigrette

Ingredients

  • ⅓ cup of Olive Oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon. Granulated sugar
  • 1 tablespoon Dijon Mustard

Instructions

  1. Combine all the ingredients in a container with a lid. Shake vigorously. Salt to taste.
Cheddar Biscuits

Cheddar Biscuits

Ingredients

  • 6 tablespoons cup frozen butter
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon + 3/4 teaspoon baking powder
  • 1 cup buttermilk
  • 3/4 cup grated cheddar cheese

Instructions

  1. Preheat oven to 475 degrees. Line a baking sheet with parchment paper.
  2. Combine flour, salt and baking powder in a bowl.
  3. Grate frozen butter using a box grater. Add in grated cheese. Give the mixture a stir to distribute butter throughout the flour.
  4. Add buttermilk into the flour butter mixture and stir using a wooden spoon- around 15 stirs will do. Careful not to overwork the dough.
  5. Onto a lightly floured surface, dump the bowl contents out - the dough will be shaggy at this point. Pat the dough out an inch thick and then fold onto itself. Repeat 5 times.
  6. Pat the dough out into 1/2" thick round and cut out biscuits of your size preference.
  7. Bake for 15 minutes, until golden brown.

Salted Butter and Chocolate Chunk Shortbread

Ingredients

  • 1/2 cup salted butter
  • 1/4 cup granulated sugar
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon vanilla extract 
  • 1 cup all purpose flour 
  • 3 ounces semisweet or bittersweet dark chocolate, chopped into chunks
  • 1 egg, beaten
  • Demerara Sugar 
  • Flaky Sea Salt 

Instructions

  1. In the bowl of a stand mixer, cream butter, granulated sugar, brown sugar and vanilla until light and fluffy. 
  2. With the mixer on low, add in flour and then chocolate chunks. Beat until just combined. 
  3. Place dough on a piece of plastic wrap and shape into a log. Refrigerate for at least 2 hours. 
  4. Preheat oven to 350 degrees and line a baking sheet with parchment paper. 
  5. Using a pastry brush, brush the outside of the log with the beaten egg, then roll in demerara sugar. Slice log into 1/2" thick rounds (sometimes the cookie kind of crumble when slicing. Just smush it back together). Place on parchment lined baking sheet and sprinkle with sea salt. 
  6. Bake for 12-15 minutes, until the edges are beginning to set. Allow to cook on a wire rack.
