Skipping This Lunch Would Be A Mis-Steak!

For me, a salad is only a full meal if protein is included. A simple mixed green salad is a side or an appetizer, not an actual meal! This salad is a great springtime dish to serve as its filling but not too heavy. Though I do question if I can really call it a salad because it’s really about the steak.

Lunch is a great time to serve a simple menu, where most of the dishes can be served at room temperature. You have less of the day to prepare so don’t put a lot of pressure on yourself to plan an elaborate meal.

I generally plan my menus with the following categories in mind: a carb, a protein, a vegetable and sweet end. For this lunch, the steak salad captures both the protein and vegetable so for the carb, I made mini cheddar biscuits. An Arnold Palmer or a John Daly, depending on your afternoon plans, is the ideal accompaniment to this meal.

Cookies of any variety are a fantastic end to lunch. Your guests can have as few or as many as they like and can even take some to go for an afternoon snack.
