An Ode to Pasta
Few things in this world offer me more comfort than a bowl of pasta. I have loved pasta for as long as I can remember. So much so that two of my absolute favorite books from childhood are Strega Nona by Tomie dePaola and Cloudy with a Chance of Meatballs by Judi Barrett, simply because of the pasta imagery. Some of the most memorable meals of my life feature pasta. And the greatest part about pasta? Anyone can make it.

I would love to share a family recipe for tomato sauce and meatballs that has been passed down through generations, preferably written on a yellowed recipe card in barely legible script. I would love to reminisce about making meatballs with my grandfather and his secret technique. But truthfully, there is no beloved family recipe and I’ve only seen my grandpa make a cup of coffee.

My tomato sauce is my own invention, hopefully one my future children and grandchildren will pass down. But tomato sauce is personal and so I will refrain from sharing my recipe and instead, encourage you to create your own recipe. Here are the basics: onion, garlic and tomato. How much onion and garlic is up to your discretion.
Type of tomato is also a personal choice. Crushed, whole, diced, a mixture of all three? Spices? Again, pick your own adventure (but don’t pick oregano. Oregano is my cilantro, I despise it). Additions may include wine, sugar, meat. Even grape jelly… though I don’t advise this.
Cooking time is another decision you have to make. I think the longer the better but some disagree!
Much like my tomato sauce, my meatballs are all my own recipe. I’ll share the recipe when they’re perfect so stay tuned.
